Generally, "cacao" refers to the raw, unprocessed products from the tree, such as the pods, beans, and nibs. "Cocoa" refers to the products that have been processed (roasted), such as cocoa powder and cocoa butter.
The three main varieties are Criollo (rare, high-quality), Forastero (robust, high-yield, the most common), and Trinitario (a hybrid of the two). We can provide details on the specific varieties we have available.
Dutched (or alkalized) cocoa powder has been treated with an alkali solution to neutralize its acidity. This results in a darker color and a milder, less bitter flavor compared to natural cocoa powder.
