Rice bran is the nutrient-rich outer layer of the rice grain that is removed during the milling process to produce white rice. It is a valuable by-product containing protein, fat, fiber, and various micronutrients.
Full fat rice bran is the bran in its natural state after milling, typically containing 15-20% fat. Defatted rice bran has had most of this oil extracted, resulting in a product with a lower fat content (around 1-5%) but a higher percentage of protein and a longer shelf life.
Fresh rice bran contains an enzyme called lipase that quickly breaks down the oil, causing the bran to become rancid. A heat-treatment process (stabilization) is used to deactivate this enzyme, preserving the freshness and nutritional quality of the bran.
